Meal Prep: Crockpot Salsa Chicken with Turmeric Rice

Aside from laying down on fresh, warm sheets, there’s almost nothing more satisfying than making a great, tasty meal with enough leftovers to freeze for almost a week’s worth of dinners! It’s incredibly rewarding to open my freezer and to be able to pick a ready-to-eat meal that I personally made.

I don’t meal prep as much as I’d like, but such is the nature of life with a toddler. Nothing really remains as consistent as you once dreamt. And that is perfectly OK because putting our families first is more important than prepping.

Although this recipe is conveniently laid out below and perfect as is, you can certainly add additional vegetables to the recipe. I personally love all the veggies I can possibly jam into one meal. For that reason, I stuffed a few extra veggies from the garden.

I picked some yard-long pole beans from my garden and pulled a couple of carrots to add to the crockpot. The two okra I ate before I made it back to the house. ?

This recipe took only six hours to cook on low in my crockpot, and I was able to get six servings from it! That’s enough for tonight’s dinner and five frozen meals for later.

Crockpot Salsa Chicken with Turmeric Rice

Ingredients

Salsa Chicken

  • 2 lbs Boneless, skinless chicken thighs
  • 16 oz Jar salsa
  • 15 oz Can of black beans
  • 1 Green pepper
  • 1 Red pepper
  • 2 cloves Fresh minced garlic
  • Salt to taste
  • Pepper to taste
  • 1.5 tsp Cumin
  • 1.5 tsp Paprika
  • 1.5 tsp Chili powder
  • .5 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Dried oregano

Side of Turmeric Rice

  • 2 cups Water
  • 2 cups Instant rice
  • Salt to taste
  • Pepper to taste
  • 2 tbsp Turmeric
  • 2 tbsp butter

Instructions

Salsa Chicken

  • In a crockpot, dump all the ingredients of the salsa chicken in and set to LOW. You may add any additional vegetables you choose. I added beans and carrots.

Turmeric Rice

  • Boil the 2 cups of water with butter.
  • Once boiling, add the 2 cups of instant rice and lower temperature to simmer.
  • Add the seasonings and allow to simmer and cook until rice is fluffy.
